Thai Spicy Angus Beef

For 2 persons
Ingredients:
200 g fillet of beef (Angus)
2 cloves garlic, peeled, germ removed and finely chopped, toasted in a little oil
For the marinade:
2 tablespoons soy sauce (not too salty)
1 tablespoon fish sauce
1 tbsp sunflower oil
2 small hot red Thai peppers, seeded, finely chopped
White pepper
Vegetable stock
1 bunch of fresh Thai basil

Preparation: 15 minutes
Cooking time: 10 minutes
Rest: 60 min
Total time: 85 minutes

How to make "Thai Spicy Angus Beef":
The meat should be cooked really quickly to keep all its finesse and tenderness. Therefore make it very thin slices, using a sharp knife. If necessary, put the meat in the freezer for 20 minutes to ease cutting. In a bowl, combine marinade ingredients. Add meat and mix well. To fry, add in a little oil around thirty basil leaves (the leaves should become transparent) then drain on paper towels. Add to meat preparation. Let it marinate about 1 hour. Heat a little oil in a skillet, put the meat quickly and moisten with a little broth with vegetables (some cl, no more). Let simmer 1-2 minutes and it's ready! Add at the last moment even basil, finely chopped fresh this time! Serve immediately.
