Chicken Coconut Milk

For 3 people
Ingredients:
2 large slices of chicken
1 onion
500 ml of milk coconut
a small piece of fresh ginger
curry
sambal chili paste (oelek)
almonds
oil
salt , pepper

Preparation: 30 minutes

Total time: 30 minutes
Difficulty: Easy

How to make "Chicken Coconut Milk":
  1. Cut the scallops into small pieces and brown in a tablespoon of oil, set aside.
  2. Cut the onion into strips, peel and cut the ginger into very fine pieces. Sauté with a little oil, a teaspoon of curry and a small teaspoon chili paste (amount varies according to personal taste).
  3. Add the cooked chicken pieces. Pour half the coconut milk, let it reduce for 5 minutes, then add salt and pepper.
  4. Add remaining coconut milk and cook another 5 minutes to a consistency a little creamy, adjust seasoning.
  5. Add the almonds at the end cooking.
