How to make "Chicken Coconut Milk":
- Cut the scallops into small pieces and brown in a tablespoon of oil, set aside.
- Cut the onion into strips, peel and cut the ginger into very fine pieces. Sauté with a little oil, a teaspoon of curry and a small teaspoon chili paste (amount varies according to personal taste).
- Add the cooked chicken pieces. Pour half the coconut milk, let it reduce for 5 minutes, then add salt and pepper.
- Add remaining coconut milk and cook another 5 minutes to a consistency a little creamy, adjust seasoning.
- Add the almonds at the end cooking.
