Chicken Rice Noodles

For 4 persons
Ingredients:
400 g fillet or thighs of chicken bone
200 g noodles rice
1 cm root ginger fresh
1 clove of garlic
1 stalk fresh lemongrass
3 tablespoons fish sauce
3 tablespoons soy sauce
1 tablespoon sugar red
2 tablespoons neutral oil
few leaves of coriander
a rod spring onion

Preparation: 20 minutes
Cooking time: 10 minutes
Rest: 60 min
Total time: 90 minutes
Difficulty: Easy

How to make "Chicken Rice Noodles":
  1. Chop finely lemongrass, garlic and ginger. Crush all in a mortar with fish sauce, soy sauce, sugar red
  2. Pour the marinade over the chicken, cut into cubes, mix, let stand 1 hour.
  3. Pour boiling lightly salted water over rice noodles. Soak to soften it (only minutes. Drain, season with 1 tablespoon oil.
  4. Heat the remaining oil in a wok until it almost smoking, cook the chicken pieces with marinade over high heat, stir it constantly.
  5. When the chicken is cooked, add rice noodles, cilantro/coriander and chopped onions and saute again 1 minute. Serve hot.
