Chicken Island


For 2 persons
Ingredients:
1 can of milk coconut
fool-the-y leaves chicken (meat more tender) or two white chicken
coconut grated
various spices (curry, coriander and spices ... "India cusine" Ducros).
1/2 onion
2 cloves garlic

Preparation: 15 minutes
Cooking time: 15 minutes
Rest: 1440 minutes
Total time: 1470 minutes

How to make "Chicken Island":

  1. Prepare the marinade: Prepare the chicken into pieces. Chop the onion and garlic. Pour half the coconut milk over the meat. Add garlic and spices. 
  2. Let the meat marinate in the refrigerator the night before. 
  3. Cooking: Add remaining coconut milk. Evaporate the liquid until the chicken get golden brown.
  4. Uses with rice preferably basmati or green beans or flat.

Thai Fried Noodles


For 4 persons
Ingredients:
1 package of noodles Asian
2 onions
1 poivron red or green
3 small carrots
4 leaves of cabbage Chinese
4 leaves of spinach Chinese
20 florets cooked
1 tablespoon ketchup
1 teaspoon sugar
Sweet soy sauce
Nuoc mam sauce
2 heads of garlic
1 lemon green
Sesame oil
Vegetable oil

Preparation: 45 minutes

How to make "Thai Fried Noodle":
  1. Bell pepper Remove seeds, peel carrots and cut into fine julienne . 
  2. Wash the spinach leaves, cut into strips. In a wok to brown the onions with a little vegetable oil, then add vegetables to pan the every few minutes. Book .
  3. Peel the prawns, slit the top and remove the black filament of the intestine. Heat wok , add the ketchup, sugar, chopped garlic, shrimp and drizzle of nuoc mam sauce and soy. Although Gently mix together and let simmer over medium heat a few minutes. Taste and adjust seasoning if necessary.

  5. Reheat vegetables, prawns and noodles in the wok . Remove from heat and drizzle with sesame oil and then add the lemon strips of cabbage. 
  6. Dresser all on Asian plates.

Crab Spring Roll


For 4 persons
Ingredients:
8 large leaves of rice round
16 large shrimp flood
1 large can of meat crab
2 carrots
1 small box of mung bean sprouts
1 large handful of noodles soy
A lawyer
some toasted sesame seeds
1 piece of ginger
20 leaves of mint (or basil to taste)
juice of 1 lemon green
1 sheet of bay
some seeds of coriander
3 cardamom pods
For the sauce:
1 bottle of sauce for spring rolls
1 bottle of "dipping sauce" spicy
few drops of sesame oil
1/2 teaspoon wasabi

How to make "Crab Spring Roll":
  1. In a bowl, soften the feuiles rice in a large volume of warm water. Remove and dry on a clean cloth wet. 
  2. Boil water in a saucepan and add the coriander seeds, cardamom pods and bay leaf. Sauté shrimp 3 to 5 minutes. Let it cool down and peel them. 
  3. Soak the noodles in plenty of boiling water and let stand off the heat 3 to 4 minutes. Drain and refresh under water. 
  4. Peel and chop the ginger, grated carrots, thinly slice the avocado into slices and remove the lemon juice. 
  5. Mix the grated carrots with ginger, add sesame seeds and lemon juice. 
  6. Put all ingredients in a bowl and start editing the rolls. On the spread sheet of rice, drop a few inches from the edge, the crab meat, bean sprouts, vermicelli, carrots, avocado and two shrimp. Roll until the middle of the sheet, add the mint leaves whole, fold the edges of the sheet and finish rolling.
  7. In a bowl, pour about 10 cl sauce for spring rolls, 10 cl "dipping sauce" Spicy, 4 to 5 drops of sesame oil and 1/2 teaspoon wasabi.

Thai Fish Cakes


For 4 persons
Ingredients:
400 g fillet of white fish
1 onion
1 clove of garlic
1 handful of green beans
1 lemon green
1 egg
10 ounces of peanut oil
1 tablespoon sugar red
2 tablespoons flour
1 teaspoon green curry paste
1 tablespoon nuoc mam
salt , pepper

Preparation: 30 minutes

How to make "Thai Fish Cakes":
  1. Peel and finely chop the onion and garlic. Put 2 tablespoons oil to be heated to make blondir onion and garlic. Taper green beans, wash them and cut them into thin slices. Grate half the zest of lime. 
  2. Cut fish fillets into cubes, mix them to a fine paste. Put the dough in a bowl, add the chopped onion and garlic, small pieces of green harciots, nuoc mam, sugar powder, curry paste, the zest of lime and whole egg . Mix vigorously with a fork. 
  3. Flour on your fingertips and divide into 8 balls préparartion same size. Flatten to shape of small discs.
  4. Heat oil in frying pan. When hot, put the patties fry 3 or 4 minutes. Drain on paper towels. Salt and pepper and serve very hot.

Crispy Crab Rice


For 4 persons
Ingredients:
100 g meat crab canned
1/2 cucumber
4 small onions, new
2 cloves of garlic
1 lemon
120 g of rice flavored
1 egg
2 teaspoons of sugar powder
2 tablespoons soy sauce
6 tablespoons peanut oil
1 pinch of chilli powder
salt , pepper

Preparation: 15 minutes
Cooking time: 25 minutes

Total time: 40 minutes
Difficulty: Easy

How to make "Crispy Crab Rice":
  1. Wash the rice under running cold water. Put to cook in a saucepan, covering it well with cold water. Once cooked, drain and let cool. 
  2. Peel the 1/2 cucumber. Cut it into small cubes. Squeeze the lemon juice and pour into a bowl. Add the diced cucumber, a teaspoon of powdered sugar, pepper, a little salt and pepper. Cool and refrigerate. 
  3. Drain crab and flake it with your fingertips. Peel and crush the garlic cloves. break the egg into a bowl and beat it into an omelette with garlic, a teaspoon of sugar, soy sauce and pepper. 
  4. Clean the spring onions and finely chop the bulbs and green stems. 
  5. Heat oil in a wok , add the rice and omelette. Cook, stirring constantly until rice is golden. 
  6. Pour the rice into a serving dish, scatter over crab meat, sprinkle with scallions and serve immediately with cucumber sauce.
